Breakfast: Ezekiel toast topped with goat cheese and a half an avocado. Clean and creamy. Avocado has great healthy fats for my body.
Mid-Morning Snack: Cave Man Chocolate Cherry Nut Bar. I love these bars! All natural, gluten free, dairy free and if you’re pale they’re perfect.
Lunch: Salad! I picked the tomatoes and green onions from my garden and mixed them in a big bowl with romaine and arugula, then topped it off with chicken. I love super simple salads with a lot of flavor. I always use my clean balsamic dressing with all my salads too. This was a huge salad!
Dinner: This zucchini lasagne literally took me an hour and a half to make. Not that it was hard or anything, I just wanted perfection and kept coming up with great ideas to add to it. I think I’ve made zucchini lasagne 5 times already, but this is by far the best. In this recipe I used roasted zucchini, sautéed onions, sautéed spinach, fresh basil, crumbled goat cheese, shredded sheep’s milk cheese, sheep’s milk parmesan and clean organic marinara.
